saskatoons, zucchini, and dragonflies .....

This is the largest dragonfly that we have and he was taking a break from mosquito catching.  We so enjoy having him and his relatives around.

The wild saskatoons in cottage country are plentiful this year for the first time in ages.  We're delighted and I expect the wildlife is, too!  We ate some fresh, some in a pie, and froze some to use this winter.  A saskatoon berry is similar to a blueberry but tastier.

We harvested our first zucchini of the season and thoroughly enjoyed it as a stirfry - sauté sliced garlic, onions, and zucchini in some olive or canola oil along with a few chili flakes (optional); add a diced tomato and season to taste, add some fresh parsley if you have it  .... yummy!

Oh my goodness, your dragonfly is 'gi-normous'. I have never heard of saskatoon berries, but they sound wonderful. Don't you just love it when you can pick from hedgerows and have a feast to boot!

Saskatoon's sound yummy. we don't have those around here. blueberries we have plenty of in the wild. your zucchini recipe sounds yummy. my mom used to shred them and freeze the shredded squash in 2 cup increments. then she would thaw and make some zucchini pineapple bread, cake or muffins with it. YUM. as kids it was sweet enough from the pineapple that we didn't even realize we were eating squash. and the BIG ones to boot! great way to save on food bill too. sometimes if she made in a Bundt pan like a cake she would add walnuts and maraschino cherries to make it festive.

Never heard of Saskatoon's but they sound delicious - love blueberries and I'm just waiting for ours to ripen so that I can enjoy them on my breakfast in the mornings. Zucchini's I think are what we call courgettes and something I have also had success in growing in the past and can be used in so many dishes - enjoy your harvest of crops.

I've never heard of a saskatoon in my life! The things we learn from blogging :) Our zucchinis are taking over--definitely going to make some bread today!

It seems a lot of us haven't heard of the saskatoons, but if they are sweet and juicy, I'm all for it! :) We've had so much rain this year that it has affected our blueberries this year. They seem diluted and not as sweet as last year's crop. Oh well! Maybe next year things will be back to normal. Have fun eating your harvests!

Hi Kate, amazing dragonfly, love them! The wild saskatoons looks delicious! Thanks for your recipe, I use a lot that kind of zucchini. Here we have another kind more white then green and I use it raw, sliced in salad with lettuce, tomato and coriander, very fresh for summer!
Enjoy summer time and your cottage.
Have a nice week!
